A quick weeknight dinner that tastes like a chicken gyro. Use toasted pita, naan, or even a tortilla as your wrap. Start with a layer of tzatziki, pile on the cooked chicken, then add sliced cucumbers and anything else you have on hand like: tomato slices, lettuce, or an extra crumble of feta all work beautifully.
1 lb ground chicken
1/4 cup feta, crumbled
2 green onions, finely chopped
2 tbsp onion, finely chopped (we used red on the livestream)
2 tbsp fresh dill, chopped (optional)
1 tbsp garlic, grated
1 tsp paprika
1 tsp kosher salt
1 tsp fresh cracked pepper
1/2–1 tsp chili powder
In a bowl, combine the ground chicken, onion, green onions, feta, garlic powder, paprika, chili powder, kosher salt, and pepper until just mixed. Don’t overwork it or the chicken can get dense.
Pushe the mixture onto a oven sheet or in an airfryer liner for the pan. Score into lines so you can easily serve once cooked.
Place in the air fryer basket in a single layer (work in batches if needed). Air fry at 400°F for about 12 minutes. Check to see that it is done cooking. 165°F is a finished temp for chicken.
Trish tip: A little spritz of olive oil before air frying helps with browning.
This is your yogurt sidekick that’s good on grilled meats, potatoes or as a dip for veggies and pita chips. Traditionally, you would only be using yogurt, cucumber and garlic. From there it's really up to your tastebuds. I added a bit of sour cream, lemon zest, dill, mint and a bit of kosher salt to taste. But have fun with what you like.
3/4 cup plain Greek yogurt
1/4 cup sour cream (more to taste)
1 cucumber, shredded + squeezed dry
1 garlic clove, grated
2 tbsp fresh dill, chopped
Zest of 1 lemon
To taste:
kosher salt
fresh lemon juice
fresh cracked pepper
In a medium bowl, stir together the Greek yogurt, sour cream, shredded cucumber, dill (if you have some fresh mint a little chopped here is nice too), garlic, lemon juice, kosher salt, and pepper until combined.
Let the sauce sit for 10–15 minutes before serving if you have time so the flavors can meld together.
Serve chilled with kabobs, grilled meats, fresh veggies, warm pita, or as a spread for wraps and sandwiches.
Trish tip: Squeeze as much liquid as possible from the cucumber so your sauce stays thick, creamy, and scoopable.

I made this for my family tonight and it was a big hit!! I’m vegetarian, so for my meal I used slightly mashed cannellini beans in place of the chicken- delish!!! Hubby said he liked it as much as the chicken version. Thanks for the recipes!❤️

Oh this is next level delicious! I have harvested more cucumbers than I know what to do with so this came at the perfect time! While I was chopping everything thing up my husband channeled Marc and made Mojitos and even put the cute little mint sticks with homegrown mint of course. We like them with tequila. Olé!
