This recipe is from this IG Live if you want to follow along. We'll be making a red pepper purée to go with our petite filets. This is not the first thing you think of with steak, but let me tell you... yum! And if you don't eat red meat, this goes great with grilled chicken or fish!
About 3 tablespoons fresh herbs (e.g., 2 sprigs of rosemary, with woody stems removed, and some thyme)
If you don’t have fresh herbs, feel free to use:
Sauté this mixture over low to medium heat for about 3-5 minutes.
Pour the mixture into a food processor and pulse. Add the zest and juice of 1 lemon. Slowly add ¼ cup olive oil while blending to emulsify. Taste, then add at least 1 teaspoon kosher salt. Enjoy! Shown with filet mignon.
